VeganMoFo 20: Thursday = Dessert (Blissful Bites Pumpkin Hot Chocolate Recipe and Cookbook Winner)

We have a Blissful Bites Cookbook winner! First, though, indulge me in my  final  post of the week featuring Christy’s recipes. As you know we started with a book review Saturday, breakfast Monday, lunch Tuesday and dinner yesterday.  Today I give you dessert:

Pumpkin Hot Chocolate, Blissful Bites page 233

I loved this sweet treat so much!  You know why? It’s not all that sweet.

Christy was kind enough to give me permission to share this delectable recipe with you!

Pumpkin Hot Chocolate from Blissful Bites by Christy Morgan
Serves 2

  • 1/2 can (15 ounces) pumpkin, or 1/2 cup pumpkin puree
  • 3 to 4 tablespoons unsweetened cocoa powder
  • Dash cinnamon
  • Dash nutmeg
  • 1 teaspoon vanilla flavoring
  • 2 cups vanilla soy milk or rice milk
  • 2 tablespoon maple syrup, or more to taste

Combine first five ingredients in a medium saucepan.  Slowly whisk in milk over medium flame, until all ingredients are well incorporated. Whisk in maple syrup.  Do not boil.

I substituted carob powder for the cocoa and So Delicious unsweetened coconut milk for the soy milk (in both cases, because it’s what I had on hand)

Because my treat was a drink, and only subtly sweet,  I paired it with a few Newtree mini bars that I purchased via Vegan Cuts.

As I’m sure you know, dark chocolate is not overly sweet, either. This made for a delicious, cocoa-y dessert!

I am excited to try the Pumpkin Hot Chocolate recipe but I’m confused by the recipe.  It says “1/2 can of pumpkin or 1/2 cup pumpkin puree”.  Isn’t the canned stuff “puree”?  I’ve never made my own pumpkin puree so maybe it’s different when you make your own and more dense or something?  Which did you use?  Hurry!  I need a cup ASAP!  🙂

    1. Ha! I understand the urgency, it’s yummy 🙂  I think 1/2 can of pumpkin pretty much equals 1/2 cup fresh pumpkin puree.  Christy has a recipe for pumpkin puree in her book.  I’ve made it before by simply roasting a pumpkin and tossing the soft roasted pieces in the food processor).  Hope this helps — let us know how you like the pumpkin hot chocolate!

  4. I’ve heard of a lot of different flavors of hot chocolate – but I don’t think I’ve heard of pumpkin. I’ll have to give it a shot!
