Greetings Meatless Monday friends! Today I thought I would share a “day in the life” of food from last week – through Instagram photos – simply to demonstrate just how simple it is to eat a plant-based diet.
Meatless Monday Meal Plan
Breakfast
Leftovers. Yep, I love, love, love eating leftovers for breakfast. I’m working on this potato soup recipe for my book
and it’s been a perfect morning meal: potatoes, mushrooms, and tofu! It comes together in seven minutes in the pressure cooker!
Lunch
I pack lunch to take to the office and this one was super simple. I warmed up tomatoes, chickpeas and mushrooms with a little tomato sauce and served it over chopped green leaf lettuce and topped it off with nutritional yeast.
I absolutely love warm veggies on top of raw veggies. You?
Dinner
My non-vegan husband whipped together a super-quick dinner for us this week. Spelt angel hair pasta and a simple, jarred, marinara sauce loaded with beans and fresh veggies and topped with vegan Parma.
Well done, husband, well done!
Are my meals fancy? No. Delicious? Yes! Made in minutes? Yes! Eating vegan isย so easy!

Correction: Eating vegan is easy *if you have a pressure cooker!* I have been wanting one for a few years now, and Santa never quite pulls through. I’m not vegan, but I like eating healthy and I like to cut out meat on a pretty regular basis. I’m just usually disappointed at all your recipes (not your fault) but they almost ALL use a pressure cooker. I NEED to own one! (on the flip side, it would be realy nice if a *few* more of your recipes didn’t involve the P.C. but its your life, not mine ๐
@disqus_sSyM7kreWS:disqus, I believe that eating vegan is easy without a pressure cooker. I just happen to be someone who does use a pressure cooker.
I have over 200 recipes on this site and I think 50 or so use a pressure cooker. (Perhaps a few more since I started working on my “Vegan Pressure Cooking” cookbook.) In the book Vegan for Her I included 50 recipes, none of which required a pressure cooker (but I included pressure cooker instructions for seven). There are so many great vegan food blogs – I’m sure you can find one with recipes that suits you better!
I just found your blog a few weeks ago, so if you’ve been posting more PC recipes lately, then that’s probably why it seems disproportionate to me. I haven’t delved into your recipes yet. I’ll keep browsing! I’m not interested in becoming vegan (not now anyway) but I do like to eat healthy, so I’ll be sticking around ๐ Also- I just noticed (and found it hilarious) that one of the largest words in your tag cloud is “Mofo.” hehehe!
*EDIT: Oh, evidently it’s “Vegan Mofo” I’ll have to see what that is….

I love leftovers for breakfast too! Especially soup, not sure why! It’s perfect on frigid mornings like this though!
