I impulsively ordered three mini-loaf pans from Amazon last week. Mostly because I’m obsessed with tiny oven-safe gadgets, pans, and dishes to use in the air fryer. The 5.7 x 3 x 2.1-inch mini loaf pans that I ordered come in a pack of three. One fits in a GoWISE 3.7-quart air fryer basket. I use two in a Philips Avance XL (the trick is to remove the air fryer basket and use the grill insert for a little more wiggle room – I don’t like to have any inserts touching the sides of the air fryer baskets).
Here’s why I love tiny little baking dishes and using them in my air fryer: We’re a household of two. I don’t like baking items that serve eight, 10 or 12 because it will either go to waste or, uh-oh, we two might eat it all! The air fryer bakes in half the time of oven baking and, bonus, pre-heating is optional and rarely over three or so minutes. The perfect solution when you want to do small-batch baking.
With a couple of ripe bananas on the counter and fresh homemade plain soy milk yogurt in the refrigerator, a recipe idea was born.
Though these mini loaf pans are darling, don’t get hung up on purchasing them. Explore your kitchen for oven-safe dishes or pans that can fit into whatever size basket you use. Pour the batter into small ramekins for banana bread muffins (-ish) or into an individual pie pan for a banana bread cake (-ish). Just have fun.

Air Fryer Banana Bread
If you have a large (5.8-quart or larger) air fryer and two mini loaf pans you can make these cute little loaves of banana bread in under 30 minutes! For smaller air fryers, bake them individually or find a larger loaf pan that fits into the air fryer basket and pour all the batter into the one pan.
Ingredients
- 2/3 cup unbleached all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 2 small very ripe bananas mashed (about 2/3 cup)
- 1/3 cup sugar
- 1/4 cup plain soy milk yogurt
- 1/4 cup vegetable oil
- 1/2 teaspoon pure vanilla extract
- 1/4 cup walnuts optional
Instructions

Combine flour, baking soda, and salt in a bowl (I use a stand mixer).

In a small bowl, mix the bananas, sugar, yogurt, vegetable oil and vanilla. Slowly combine the wet ingredients with the dry ingredients (I poured into the stand mixer bowl on low). Don't over mix, just combine well. Fold in the walnuts (if using).

Preheat the air fryer on 330°F for 3 minutes (optional).

While the air fryer is preheating, pour half the batter into one mini loaf pan and the other half into a second mini loaf pan. (No need to grease the pans if non-stick; if not non-stick, spritz the pans with vegetable oil.)

If you have a large (5.8-qt or larger) air fryer, Transfer the loaf pans to the air fryer basket; you may need to remove the basket and use a grill insert if the pans are touching the side). Air fry on 330°F for 20 to 22 minutes. (a toothpick should come out clean). If using a smaller air fryer, you will need to cook these separately or find a larger loaf pan that fits into the basket and pour all of the batter into the pan.

Transfer the pans to a wire rack to cool for 30 minutes (leave the bread in the pan).
