After the three-day cooking intensive this past weekend (more on that soon, I promise!) I’m inspired to add more variety to what I eat for breakfast. For the last five months I’d say 80% of my breakfast meals have been a green smoothie or a fresh vegetable juice. I will be trying to add more cooked vegetables, soups and grains to my morning meals.
But I do love the boost I get from a smoothie! Now I may begin to enjoy them more as a hearty snack or dessert. Like this one:
JL’s Coconut-Mango-Avocado Smoothie (Printable Version)
Serves 2
- 2 cups coconut water (Fresh, from 2 young thai coconuts. Never opened a young, thai coconut? Here are great step-by-step instructions. It’s a little scary at first, but I popped that second one open in no time!)
- 2 T hemp seed
- 1/2 cup frozen mango
- 1/2 an avocado
- 1 medjool date
- 1/2 cup of ice
Toss everything into a blender and enjoy!
While on the deck enjoying this smoothie I had to capture something very exciting!
My four-week(ish) old garden is blooming! I have little, green cherry tomatoes, blossoms on the jalapeno pepper plant and the lettuce and kale are thriving!

I made a smoothie very similar to this but used coconut milk rather than water. Avocado is one of my favorite smoothie additions. I also have been loving fresh berries in them with homemade granola sprinkled over the top!
Coconut milk is a great idea! I’m thinking of taking a smoothie to work for lunch today (it’s SO hot!) and the coconut milk might make it more substantial. Thanks for the idea!
Wow, this looks fabulous. I haven’t tried cracking a coconut yet but now I’m inspired to do so. I so love coconut and would be drinking coconut water all the time if I could.
Coconut water is dreamy in the summer (with lemon or lime) when out on a run. Even when it gets warm, it’s still refreshing!
YUM-O! Three of my top fave foods (Coconut, Avocado & Mango) all in the same mix – can’t wait to try this! This morning my smoothie consisted of kale, ginger, pineapple, banana, hemp seeds, rice protein, maca, date, lime and orange juice. Your garden looks fab, JL! Oh wow that smoothie sounds amazing. I love a smoothie in the summer months. Nothing beats it! I just had a purple one with lots of berries.

Mmmmm. Your smoothie looks great. It’s probably not the same, but I just purchase coconut water in a carton and use that in my smoothie. I love (!) coconut water. I will be trying your smoothie recipe very soon cause it includes everything I love.
Ricki’s post was great — I’m always a little afraid to “veganize” a recipe on my own, but her tips have helped me get a bit braver.
Elizabeth, I know exactly what you mean about baking — Ricki’s tips are excellent. And yes, I definitely use purchased coconut water. But I’d love to use fresh more often.

Lately i’ve been adding VitaMineral Green, vegan protein powders, kale, carrots and frozen watermelon chunks into my smoothies.

I made this smoothie today in defiance of the cold rainy British weather and am slurping as I type. This puts me in mind of a raw version of vanilla custard – with a pinch of vanilla, a bit less fluid/ or some natural thickener this would be a great pudding sauce..
