I broke out the ice cream maker Sunday when I read saw this recipe on YumUniverse.
Heather encourages modifications and it’s a good thing because I didn’t have everything on hand. My modifications:
- A mixture of medjool dates and jumbo flame raisins
- Coconut water instead of filtered water
- Peanut butter instead of almond butter
I added mini vegan chocolate chips to the ice cream maker during the last five minutes of processing for some “chunks.”
Tasty!

Ohhhh… PB and chocolate is my all-time favorite combo. I like it when the PB is lightly swirled in at the last moment so you get those yummy frozen globs of PB. Not that I’ve thought extensively about it.. 😉

The ice cream sounds so good! Coconut water, PB, and dates… I can do that!! YUM!

I wish I had my ice cream maker with me here in San Diego. Guess I’ll have to wait to get back to Austin to try that recipe. It looks great.
